Description

A light, elegant dessert featuring a creamy cheesecake-like base topped with fresh seasonal fruits. Perfect for holidays or casual gatherings, this vibrant fruit pizza requires no special equipment and adapts to available produce.


Ingredients

10 oz processed cheese slices (milkfat-free for lactose intolerance)
3/4 cup granulated sugar
1 tbsp lemon juice (plus 1 tsp for glaze)
Optional graham cracker base: 1/2 cup cracker crumbs blended with 2 tbsp melted butter
4 cups fresh fruit (pineapple, kiwi, cantaloupe, blueberries, etc.)


Instructions

Grate 10 oz processed cheese slices into a bowl
Mix in 1/2 tsp lemon juice, 3 tbsp sugar, and 3 tbsp milk until smooth
Spread the mixture 1/2″ thick on a greased 12″x16″ baking sheet
Pat 3 cups of sliced fruits dry and arrange in overlapping circles on the filling
Refrigerate for 3 hours, then cut into 16 slices just before serving

Notes

Add 1/4 tsp salt to the cheese base for enhanced flavor
Dry wet fruits thoroughly before arranging to prevent spotting
Chill berries separately for 30 minutes to avoid crushing
Use maple syrup as a partial sugar substitute (up to 1 tsp)
Dehydrate figs 1 week in advance for better texture
