- 100g unsalted butter
- 50g powdered sugar
- 1 egg yolk
- 2–3 tbsp cold water
- 10–12 fresh apricots
- 80g granulated sugar
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1 tbsp cornstarch
Instructions
- Mix flour, sugar, and salt in a bowl.
- Cut in cold butter until crumbly.
- Add egg yolk and water to form dough.
- Chill dough for 30 minutes.
- Roll dough and place in tart pan.
- Mix apricots with sugar, lemon juice, vanilla, and cornstarch.
- Arrange apricots over crust.
- Bake at 180°C for 35–40 minutes.
- Brush with warm apricot jam.
- Cool before serving.
Notes
Use firm ripe apricots for best texture. Chill dough for flakier crust. Store in fridge up to 3 days. Serve warm with ice cream for extra indulgence.
