Description

This Easy Apricot Tart Recipe is a buttery, rustic dessert filled with juicy apricots baked into a golden crust. Ingredients

  • 200g all-purpose flour
  • 100g unsalted butter
  • 50g powdered sugar
  • 1 egg yolk
  • 23 tbsp cold water
  • 1012 fresh apricots
  • 80g granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch

Instructions

  1. Mix flour, sugar, and salt in a bowl.
  2. Cut in cold butter until crumbly.
  3. Add egg yolk and water to form dough.
  4. Chill dough for 30 minutes.
  5. Roll dough and place in tart pan.
  6. Mix apricots with sugar, lemon juice, vanilla, and cornstarch.
  7. Arrange apricots over crust.
  8. Bake at 180°C for 35–40 minutes.
  9. Brush with warm apricot jam.
  10. Cool before serving.

Notes

Use firm ripe apricots for best texture. Chill dough for flakier crust. Store in fridge up to 3 days. Serve warm with ice cream for extra indulgence.
