Description

This easy tabbouleh salad is fresh, zesty, and full of vibrant Mediterranean flavors. Made with finely chopped parsley, juicy tomatoes, bulgur, and a bright lemon dressing, it’s a light and healthy dish perfect for any occasion.


Ingredients

  • 1 cup fine bulgur wheat
  • 2 cups fresh parsley, finely chopped
  • 1/2 cup fresh mint, finely chopped
  • 3 ripe tomatoes, diced
  • 1 small red onion, finely chopped
  • 1/4 cup fresh lemon juice
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place bulgur in a bowl and cover with warm water. Let soak for 15 minutes.
  2. Drain bulgur and squeeze out excess water.
  3. Finely chop parsley and mint.
  4. Dice tomatoes and chop onion.
  5. Combine all ingredients in a bowl.
  6. Add lemon juice and olive oil.
  7. Season with salt and pepper.
  8. Toss gently and let sit before serving.

Notes

Use very fresh herbs for best flavor. Adjust lemon juice to taste. Store in the fridge for up to 2 days and refresh with extra lemon juice before serving.
