Ingredients
Ground Beef (or Turkey)
1/2 lb
Uncooked White Rice
1 cup
Diced Tomatoes with Juice
1 can (15 oz)
Refried Beans (or Kidney Beans)
1 can (15 oz)
Cheddar Cheese Shreds
2 cups
Taco Seasoning
1 packet
Shredded Lettuce
1 cup
Instructions
Drain and rinse refried beans
Boil rice in water for 8 minutes, drain
Brown ground beef in a pan, drain fat
Add diced tomatoes, refried beans, and taco seasoning to the beef; simmer
Layer cooked rice in a casserole dish
Top with beef mixture and shredded cheese
Bake at 375°F (190°C) for 20 minutes
Add shredded lettuce before serving
Notes
Use ground turkey for halal/vegetarian versions
For brown rice, increase cooking time by 10-15 minutes
Swap cheddar with Monterey Jack or mozzarella for melty texture
Add pickled jalapeños or lime zest as optional toppings
