Ingredients
Ground beef (80% lean) 1.5 lb
Tortilla chips 8 cups
Taco seasoning 2 tbsp
Shredded cheese (Mozzarella or Cheddar) 2 cups
Diced tomatoes 1.5 cups
Olive oil 1 tbsp (for drizzling) (optional)
Instructions
Preheat oven to 375°F (190°C) and grease a 13×9-inch baking dish
Cook ground beef in a skillet over medium-high heat until browned
Add taco seasoning and 1 cup tomatoes, simmer for 5 minutes
Spread tortilla chips in the dish, top with meat mixture
Add remaining tomatoes and 1.5 cups cheese
Cover and bake for 15 minutes
Uncover, add 0.5 cup cheese and drizzle with olive oil
Bake uncovered for 10 minutes
Notes
Press chips firmly to prevent crumbling
Use full-fat cheese for even melting
Let rest 5 minutes before serving
Thoroughly drain beef to avoid sogginess
Substitute homemade taco seasoning if preferred
