Description

This easy zucchini recipe is fresh, flavorful, and ready in just 25 minutes. I sauté tender zucchini with garlic, onion, and simple spices, then finish it with lemon juice and herbs for a bright, comforting dish perfect for any meal.


Ingredients

  • 3 medium zucchini, sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 small onion, sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon chili flakes (optional)
  • Juice of 1/2 lemon
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Slice zucchini into thin rounds.
  2. Heat olive oil in a large pan over medium heat.
  3. Add onion and cook until soft.
  4. Add garlic and cook for 30 seconds.
  5. Add zucchini and season with spices.
  6. Cook for 5–7 minutes until golden.
  7. Stir gently and cook until tender.
  8. Squeeze lemon juice over the top.
  9. Sprinkle parsley and Parmesan before serving.

Notes

Do not overcrowd the pan to achieve golden zucchini. You can substitute Parmesan with feta cheese or skip it for a vegan option. Store leftovers in the fridge for up to 3 days and reheat in a pan for best texture.
