Description

I make this Focaccia with Cherry Tomatoes soft, golden, and full of rich olive oil flavor. Juicy cherry tomatoes and fresh rosemary make every bite comforting, rustic, and deeply satisfying. This is my go-to homemade Italian bread for family meals and gatherings.


Ingredients

Scale
  • 500g strong bread flour
  • 350ml warm water
  • 7g instant yeast
  • 2 tsp salt
  • 4 tbsp olive oil
  • 200g cherry tomatoes
  • 1 tbsp fresh rosemary
  • Sea salt flakes

Instructions

  1. Mix warm water and yeast until foamy.
  2. Add flour and salt and mix well.
  3. Add olive oil and knead until smooth.
  4. Let dough rise until doubled in size.
  5. Spread dough into oiled baking tray.
  6. Press dimples into dough with fingers.
  7. Add cherry tomatoes and rosemary.
  8. Drizzle olive oil and sprinkle sea salt.
  9. Bake at 200°C for 25 minutes.
  10. Cool slightly before serving.

Notes

Use ripe cherry tomatoes for best flavor. Let dough rise fully for airy texture. Add olives or garlic for variation. Always drizzle extra olive oil before baking for crisp crust.
