Description

This Focaccia with Olive Oil and Herbs is soft, airy, and infused with fragrant rosemary, thyme, and oregano. I love making it for family meals because it brings warmth and comfort to the table with its golden crust and rich olive oil flavor.

Ingredients

Scale
  • 500g bread flour
  • 7g instant yeast
  • 2 tsp sugar
  • 2 tsp salt
  • 350ml warm water
  • 80ml olive oil
  • 2 tbsp rosemary
  • 1 tbsp thyme
  • 1 tbsp oregano
  • 2 garlic cloves
  • Flaky sea salt

Instructions

  1. Activate yeast in warm water with sugar.
  2. Mix flour and salt in a bowl.
  3. Add yeast mixture and olive oil.
  4. Knead until smooth dough forms.
  5. Let dough rise for 1–2 hours.
  6. Spread dough into oiled baking tray.
  7. Rest for 30–40 minutes.
  8. Dimple dough with fingertips.
  9. Add herbs, garlic, olive oil, and salt.
  10. Bake at 200°C for 20–25 minutes until golden.

Notes

For best results, use high-quality extra virgin olive oil. You can add olives, sun-dried tomatoes, or caramelized onions. Letting the dough rise slowly improves flavor and texture.
