2.5 cups all-purpose flour
1 cup unsalted butter, cubed and frozen
0.75 cup granulated sugar
4 large Granny Smith apples, peeled and sliced
4 large Honeycrisp apples, peeled and sliced
1.5 teaspoons ground cinnamon
1 tablespoon lemon juice
2 tablespoons cornstarch
0.5 teaspoon salt
46 tablespoons ice water


Instructions

Combine flour and salt in a large chilled bowl.
Cut frozen butter into the flour using a pastry cutter until the mixture resembles coarse meal.
Add ice water one tablespoon at a time, mixing gently until the dough holds together.
Divide dough into two disks, wrap in plastic, and refrigerate for at least one hour.
Peel and slice apples into thin, uniform wedges.
Toss apple slices with sugar, cinnamon, lemon juice, and cornstarch.
Roll out the first dough disk and place it into a pie dish.
Fill the crust with the apple mixture.
Roll out the second disk to cover the pie, seal the edges, and cut slits for steam.
Bake at 375°F for 55 minutes or until the crust is golden and the filling is bubbling.

Notes

Ensure the butter remains as cold as possible throughout the process to guarantee a flaky crust. Do not overwork the dough. Serve warm, optionally with a scoop of vanilla bean ice cream.
