Ingredients
2 cups almond flour or gluten-free flour blend
1/3 cup coconut oil, softened (can substitute vegan butter)
1 tsp vanilla extract, alcohol-free
1/2 tsp baking powder (optional)
3 tbsp granulated sugar
1 pint strawberries, washed, hulled, and sliced
2 kiwis or 2 mangoes/oranges (sliced)
1 cup sweetened coconut, toasted
Instructions
Preheat oven to 350°F (180°C)
Combine almond flour, sugar, and baking powder in a bowl
Cut in coconut oil until a crumbly texture forms
Press the mixture into a greased 10-inch pizza pan
Bake for 10 minutes
Allow to cool completely
Top with a glaze (optional)
Arrange strawberries, kiwis, and toasted sweetened coconut on the cooled crust
