1.5 lbs boneless skinless chicken breasts (pounded to 1/2 inch thickness)
1/2 cup freshly grated Parmesan cheese
3 tbsp unsalted butter
4 cloves garlic (minced)
2 tbsp extra virgin olive oil
1/4 cup heavy cream
1 tsp Italian seasoning
Salt and black pepper to taste


Instructions

Pound the chicken breasts between plastic wrap to an even 1/2 inch thickness.

Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.

In the same skillet, melt the remaining 2 tablespoons of butter and sauté the minced garlic until fragrant.

Return the chicken to the skillet, coating it thoroughly with the creamy garlic parmesan sauce before serving.

Notes

Use freshly grated parmesan rather than pre-grated for the best melting consistency. If the sauce becomes too thick, add a tablespoon of water or broth to loosen it. Store leftovers in an airtight container for up to 3 days.
