Description
These festive gingerbread cookies are a holiday staple, beloved for their crisp texture and ability to hold intricate shapes perfectly. Infused with warming spices like ginger, cinnamon, and cloves, they offer a deep, rich flavor profile. By chilling the dough twice, we ensure the cookies maintain their sharp, professional edges during the bake. Perfect for decorating with royal icing, these sturdy and delicious cookies are the ultimate treat for seasonal gatherings and family baking days.
Ingredients
3.5 cups all-purpose flour
1.5 teaspoons ground ginger
1 teaspoon ground cinnamon
0.5 teaspoon ground cloves
0.5 teaspoon baking soda
0.5 cup unsalted butter, softened
0.5 cup dark brown sugar, packed
0.5 cup unsulphured molasses
1 large egg
Instructions
Whisk the flour, ginger, cinnamon, cloves, and baking soda in a medium bowl until combined.
Cream the softened butter and brown sugar in a large mixer bowl until light and fluffy.
Beat in the molasses and egg until the mixture is uniform and smooth.
Add the dry ingredients to the wet ingredients in three additions while mixing on low speed until a dough forms.
Divide the dough into two discs, wrap in plastic, and chill for at least 2 hours.
Preheat oven to 350°F (175°C).
Roll the dough out to 1/4 inch thickness on a floured surface and cut into desired shapes.
Place cut-outs on a parchment-lined baking sheet and chill for another 15 minutes.
Bake for 8-10 minutes or until edges are set.
Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
Spoon and level the flour to avoid packing, which can make the cookies dry. Using unsulphured molasses provides the best flavor balance. The double-chill method is critical for preventing the cookies from spreading in the oven.
