A no-bake dessert featuring a creamy cheese base, juicy strawberries, and a glistening glaze on a sugar cookie crust. Perfect for summer gatherings or sweet cravings with minimal effort and maximum flavor.
Ingredients
9-inch or 10-inch pre-made sugar cookie crust
8 oz Neufchâtel cheese
2 tbsp granulated sugar
1 tsp vanilla extract (optional)
4 cups fresh strawberries
1.5 cups blueberries
2 tbsp lemon juice
1 tbsp confectioners’ sugar (for glaze)
Instructions
Thaw the sugar cookie crust according to package instructions. Press it into a 9-inch pizza pan lined with parchment paper.
Beat Neufchâtel cheese with granulated sugar and vanilla extract until smooth in a stand mixer at medium speed.
Spread the cream cheese mixture evenly over the crust.
Chill in the refrigerator to firm for a minimum of 10 minutes.
Top with fresh strawberries and blueberries.
In a small bowl, mix lemon juice and confectioners’ sugar to make the glaze. Drizzle over the fruit.
Notes
Use gluten-free dough if needed for dietary restrictions.
Part-skim Neufchâtel cheese can be used for a lighter version.
Raspberries or peaches can be substituted for blueberries.
Orange juice can be used in place of lemon juice for a different flavor profile.
