Description

These gluten-free pine nut cookies are soft, chewy, and filled with rich almond flavor. With crisp golden edges and a delicate center, they make the perfect elegant treat for tea time or dessert.


Ingredients

Scale
  • 250g almond flour
  • 150g caster sugar
  • 2 egg whites
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 120g pine nuts
  • Pinch of salt
  • Icing sugar for dusting

Instructions

  1. Preheat oven to 170°C and line a baking tray.
  2. Whisk egg whites until frothy.
  3. Add sugar, vanilla, lemon zest, and salt, then mix well.
  4. Fold in almond flour to form a soft dough.
  5. Roll dough into small balls.
  6. Coat each ball in pine nuts and press gently.
  7. Place on tray and flatten slightly.
  8. Bake for 15–18 minutes until golden.
  9. Cool completely and dust with icing sugar.

Notes

Use fine almond flour for a smooth texture. Do not overbake to keep centers soft. Store in an airtight container for up to 4 days or freeze for longer storage.
