- 150g caster sugar
- 2 egg whites
- 1 teaspoon vanilla extract
- Zest of 1 lemon
- 120g pine nuts
- Pinch of salt
- Icing sugar for dusting
Instructions
- Preheat oven to 170°C and line a baking tray.
- Whisk egg whites until frothy.
- Add sugar, vanilla, lemon zest, and salt, then mix well.
- Fold in almond flour to form a soft dough.
- Roll dough into small balls.
- Coat each ball in pine nuts and press gently.
- Place on tray and flatten slightly.
- Bake for 15–18 minutes until golden.
- Cool completely and dust with icing sugar.
Notes
Use fine almond flour for a smooth texture. Do not overbake to keep centers soft. Store in an airtight container for up to 4 days or freeze for longer storage.
