- 4 large ripe tomatoes, sliced
- 1 cup cherry tomatoes, halved
- 150 grams goat cheese, crumbled
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- 1 small red onion, thinly sliced
- Fresh basil leaves
- Salt to taste
- Black pepper to taste
Instructions
- Wash and dry all tomatoes thoroughly.
- Slice the large tomatoes and halve the cherry tomatoes.
- Arrange tomatoes on a large serving platter.
- Thinly slice the red onion and scatter over the tomatoes.
- Whisk olive oil, balsamic vinegar, honey, salt, and black pepper in a small bowl.
- Crumble the goat cheese evenly over the salad.
- Add fresh basil leaves on top.
- Drizzle the dressing over the salad just before serving.
- Serve immediately with crusty bread if desired.
Notes
