2 large romaine hearts, cut lengthwise
3 tbsp extra virgin olive oil
1/2 cup parmesan cheese, shaved or grated
2 cloves garlic, minced
3 tbsp fresh lemon juice
1 tsp Dijon mustard
1 tsp vegetarian Worcestershire sauce
1 cup croutons


Instructions

Slice the romaine hearts in half lengthwise while keeping the root end intact.
Brush the cut sides of the lettuce lightly with a small amount of olive oil.
Preheat your grill to high heat and ensure grates are clean and oiled.
Place the romaine halves cut-side down on the grill grates for exactly one minute to create char marks.
Remove the lettuce from the grill immediately.
In a small bowl, whisk together the minced garlic, lemon juice, mustard, and vegetarian Worcestershire sauce.
Slowly stream in the remaining olive oil while whisking to emulsify the dressing.
Arrange the grilled romaine on plates, drizzle with the dressing, top with parmesan cheese and croutons, and serve immediately.

Notes

Keep the root end intact so the lettuce leaves stay together during the grilling process. Serve immediately after grilling while the lettuce is still warm and the edges are crisp. Ensure the grill is very hot before placing the lettuce to achieve a sear without wilting the leaves.
