Description

Ingredients

1.5 lbs Boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
1/4 cup Olive oil
1/4 cup Lemon juice, freshly squeezed
4 cloves Garlic, minced
1 tablespoon Dried oregano
1 teaspoon Dried thyme
1/2 teaspoon Black pepper, freshly ground
1/4 teaspoon Salt
Wooden or metal skewers


Instructions

In a medium bowl, combine olive oil, lemon juice, minced garlic, dried oregano, dried thyme, black pepper, and salt. Whisk to combine.
Add the cubed chicken to the marinade. Toss to ensure all pieces are evenly coated.
Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours.
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
Thread the marinated chicken pieces onto the prepared skewers, leaving a small space between each piece.
Preheat your grill to medium-high heat (about 400-450°F or 200-230°C).
Clean and oil the grill grates to prevent sticking.
Place the skewers on the preheated grill.
Grill for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice char marks. The internal temperature should reach 165°F (74°C).
Remove skewers from the grill and let them rest for a few minutes before serving.

Chicken thighs are recommended for extra juiciness. Ensure chicken is cooked to an internal temperature of 165°F (74°C).
