Description
Transform the traditional Italian caprese into a vibrant seasonal masterpiece by incorporating caramelized stone fruit. This elevated dish combines the subtle smokiness of char-grilled peaches with creamy buffalo mozzarella pearls, fragrant fresh basil, and a tangy balsamic glaze. It is the perfect balance of summer sweetness and savory freshness, making it an ideal cooling side dish or light lunch option for gatherings.
Ingredients
4 large peaches, halved and pitted
8 ounces buffalo mozzarella pearls
1 cup fresh basil, torn into ribbons
3 tablespoons balsamic glaze
2 tablespoons extra virgin olive oil
1/2 teaspoon flaky sea salt
Instructions
Brush the cut sides of the halved peaches lightly with olive oil to prevent sticking.
Heat a grill or cast-iron grill pan over medium-high heat until hot.
Place peaches cut-side down on the grill and sear for 3 minutes without moving them to develop char marks.
Carefully flip the peaches and grill for another 1-2 minutes until soft but still firm enough to hold their shape.
Remove from heat, slice into thick wedges if desired, and arrange on a serving platter.
Top with mozzarella pearls and fresh basil ribbons.
Drizzle with balsamic glaze and sprinkle with flaky sea salt before serving.
Notes
Ensure the peaches are firm but ripe to prevent them from becoming too mushy on the grill. You can add toasted pine nuts for extra crunch. Serve immediately while the peaches are still slightly warm for the best contrast against the cool mozzarella and fresh basil.
