Ingredients
1 lb ground chicken
2 tbsp chili powder
1 tbsp ground cumin
1 tsp onion powder
3 cloves garlic, minced
1/4 cup low-sodium chicken broth
1 tbsp fresh lime juice
1 tbsp olive oil
Salt and pepper to taste
8 small corn or flour tortillas
Instructions
Heat one tablespoon of olive oil in a large heavy-bottomed skillet over medium-high heat.
Add the ground chicken to the hot pan once the oil ripples.
Cook, breaking the meat apart with a wooden spoon, until browned throughout.
Stir in the chili powder, ground cumin, onion powder, and minced garlic.
Sauté for 1-2 minutes until the spices are fragrant.
Pour in the chicken broth to deglaze the pan and simmer for 3 minutes to keep the meat moist.
Remove from heat and stir in the fresh lime juice.
Season with salt and pepper to taste.
Serve in warm tortillas with your favorite taco toppings.
Notes
Ensure the pan is at medium-high heat to get a good sear on the chicken, which adds significant depth of flavor. If you prefer extra spice, add a pinch of cayenne pepper with the other seasonings. Store leftovers in an airtight container for up to 3 days.
