Ingredients
4 cups fresh broccoli florets, stems peeled and diced
2 cups sharp cheddar cheese, shredded manually
2 medium carrots, finely diced
1 small yellow onion, finely diced
4 cups low-sodium vegetable broth
1 cup 2% milk (or unsweetened almond milk)
3 cloves garlic, minced
2 tablespoons extra virgin olive oil
Instructions
Heat olive oil in a large heavy-bottomed pot over medium heat.
