- 1 cup fine bulgur wheat
- 2 cups fresh parsley, finely chopped
- 1/2 cup fresh mint, chopped
- 3 medium tomatoes, diced
- 4 green onions, sliced
- 1/4 cup fresh lemon juice
- 1/4 cup olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Place bulgur in a bowl and cover with warm water. Soak for 15 minutes.
- Drain excess water and fluff with a fork.
- Finely chop parsley and mint.
- Dice tomatoes and slice green onions.
- Combine all ingredients in a large bowl.
- Add lemon juice, olive oil, salt, and pepper.
- Toss gently until well combined.
- Let rest for 10 minutes before serving.
Notes
Use the freshest herbs for the best flavor. Adjust lemon juice to your taste. Store in the fridge for up to 2 days. Do not reheat; serve chilled or at room temperature.
