Description

A no-bake, refreshing fruit pizza topped with seasonal berries and pineapple. Hydrating watermelon meets tangy low-fat yogurt for a naturally sweet summer treat. Assembles in minutes and perfect for potlucks or post-workout snacks.


Ingredients

4 cups watermelon, cubed
2 cups low-fat yogurt, plain or Greek
2 tbsp honey
1 tbsp chopped mint or basil
1 cup thawed blueberries
1 cup strawberries, sliced
1 cup pineapple, diced
2 tbsp almond slivers or chia seeds (for vegan)


Instructions

Blend watermelon cubes in a food processor until pureed
Mix in yogurt, honey, and mint until smooth
Pour onto parchment-lined baking sheet and spread into 9-inch circle
Freeze for 15 minutes to firm slightly
Evenly layer blueberries, strawberries, and pineapple on the center
Sprinkle almonds/chia seeds over fruit layer
Return to freezer for 10-15 minutes to set
Thaw at room temperature 5-7 minutes before slicing
Cut into 8 wedges using a long serrated knife
