Ingredients

1.5 lbs Ground Turkey
15 oz can Black Beans, rinsed and drained
15 oz can Kidney Beans, rinsed and drained
1 cup Corn
28 oz can Diced Tomatoes
4 cups Beef Broth
2 packets Taco Seasoning
1 medium Onion, chopped


Instructions

Heat a large heavy-bottomed pot over medium-high heat.
Add the ground turkey to the pot and break it apart with a wooden spoon.
Sauté the meat until it reaches a deep brown color and no pink remains.
Add the chopped onions and cook until softened.
Stir in the taco seasoning to coat the meat and onions thoroughly.
Pour in the diced tomatoes with their juices to deglaze the pan.
Add the beans, corn, and beef broth.
Bring to a simmer and cook for approximately 20 minutes to allow flavors to meld.

Notes

Store in airtight containers in the refrigerator for up to 4 days. You can substitute ground turkey with extra-lean ground beef and kidney beans with pinto beans if desired. Ensure your taco seasoning packets do not contain any alcohol-based additives.
