Description

Elevate your holiday table with this scratch-made green bean casserole. By replacing processed canned soups with a rich, savory mushroom velouté and utilizing fresh, blanched green beans, this dish offers a superior texture and umami-packed flavor. It is a timeless, crowd-pleasing comfort food that provides the perfect balance between earthy, creamy vegetables and a satisfyingly crunchy fried onion topping. This recipe is completely alcohol-free and vegetarian, making it an ideal side dish for any roast or meat-free main course.

Ingredients

Scale

2 lbs fresh green beans, trimmed and blanched
1 lb cremini mushrooms, sliced thinly
4 tbsp unsalted butter
1/4 cup all-purpose flour
2 cups low-sodium vegetable stock
1/2 cup heavy cream
2 cups fried onions
Salt and black pepper to taste

Instructions

Preheat your oven to 375 degrees Fahrenheit.
Blanch the trimmed green beans in boiling salted water for 4 minutes.
Drain the beans immediately and transfer them into an ice water bath to stop the cooking process.
Melt the butter in a large skillet over medium heat and add sliced mushrooms.
Sauté mushrooms until golden brown and liquid has completely evaporated.
Whisk in the flour and cook for one minute to remove the raw flour taste.
Pour in vegetable stock and heavy cream while whisking constantly to prevent lumps.
Simmer the sauce until it thickens enough to coat the back of a spoon.
Combine the blanched green beans with the mushroom sauce and toss to coat.
Transfer the mixture to a baking dish and top with the fried onions.
Bake for 20-25 minutes or until the topping is golden brown and the sauce is bubbly.

Notes

Ensure the mushrooms are browned well to achieve the best umami depth. If the sauce is too thick, add a splash of extra vegetable stock. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to maintain the crispness of the onion topping.
