  • 4 egg yolks
  • ½ cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter
  • 1 pound fresh strawberries, hulled and halved
  • 3 tablespoons strawberry jam
  • 1 tablespoon water

Instructions

  1. Mix flour, powdered sugar, and salt in a large bowl.
  2. Cut in the cold butter until the mixture looks crumbly.
  3. Add egg yolk and cold water, then mix until dough forms.
  4. Wrap dough and chill for 30 minutes.
  5. Roll dough and place into a tart pan.
  6. Bake the crust at 375°F until golden brown.
  7. Heat milk in a saucepan over medium heat.
  8. Whisk egg yolks, sugar, and cornstarch in a bowl.
  9. Slowly whisk warm milk into the egg mixture.
  10. Return mixture to saucepan and cook until thick.
  11. Stir in vanilla extract and butter.
  12. Cool the pastry cream completely.
  13. Spread filling into cooled tart crust.
  14. Arrange strawberries neatly on top.
  15. Warm jam with water and brush over strawberries.
  16. Chill tart for at least 1 hour before serving.

Notes

Use fresh ripe strawberries for the sweetest flavor. Chill the tart before slicing for cleaner pieces. You can prepare the crust and pastry cream one day ahead to save time. Store leftovers in the refrigerator for up to 3 days.
