  • 1 cup sweet corn kernels

  • 1/4 cup fresh basil leaves
  • 1/4 cup crumbled feta cheese
  • 3 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Wash and prepare all vegetables carefully.
  2. Slice the cherry tomatoes, cucumber, avocado, and red onion.
  3. Add the vegetables, corn, and mixed greens to a large salad bowl.
  4. In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and black pepper.
