Ingredients

  • 2 large English cucumbers, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 2 tablespoons fresh dill, chopped
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: crumbled feta cheese

Instructions

  1. Wash and prepare all vegetables.
  2. Slice the cucumbers and red onion thinly.
  3. Cut the cherry tomatoes in half.
  4. Add the vegetables and dill to a large mixing bowl.
  5. In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, sugar, salt, and black pepper.
  6. Pour the dressing over the salad.
  7. Toss gently until everything combines evenly.
  8. Chill the salad for 15 minutes before serving.
  9. Serve fresh with extra dill or feta cheese if desired.
