Ingredients

  • 2 cups baby spinach
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 avocado, diced
  • 1 cup grilled chicken, sliced
  • 1 cup sweet corn kernels
  • 1 cup strawberries, sliced
  • 1 small red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup roasted sunflower seeds
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 garlic clove, minced
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Wash and dry all vegetables thoroughly.
  2. Chop the romaine lettuce and prepare all fresh ingredients.
  3. Grill the chicken until fully cooked, then slice into strips.
  4. Whisk together olive oil, lemon juice, honey, Dijon mustard, garlic, salt, and pepper to make the dressing.
  5. Add lettuce, spinach, cucumber, tomatoes, strawberries, avocado, onion, corn, chicken, feta cheese, and sunflower seeds into a large salad bowl.
