This Refreshing Summer Salad is light, colorful, crisp, and bursting with fresh summer flavors.   • 1 large romaine lettuce, chopped
  • 1 cucumber, sliced
  • 2 cups cherry tomatoes, halved
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small red onion, thinly sliced
  • 1 avocado, diced
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh mint, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon honey
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash and dry all vegetables thoroughly.
  2. Chop the romaine lettuce and place it into a large salad bowl.
  3. Slice the cucumber, peppers, tomatoes, and onion.
  4. Soak the sliced onion in cold water for 10 minutes, then drain and pat dry.
  5. Whisk together olive oil, lemon juice, red wine vinegar, honey, garlic, salt, and black pepper in a small bowl.
  6. Add cucumber, tomatoes, peppers, onion, avocado, feta cheese, parsley, and mint to the bowl.
  7. Pour the dressing over the salad.
  8. Toss gently until evenly coated.
  9. Serve immediately or chill for 15 minutes before serving.

Notes

Store leftover salad in an airtight container in the refrigerator for up to 2 days. Keep the dressing separate if preparing ahead. Add grilled chicken, chickpeas, or shrimp for extra protein. Fresh herbs make the salad taste brighter and more refreshing.
