  • 1 log goat cheese, sliced into rounds
  • 1 cup breadcrumbs
  • 1 egg
  • 2 tablespoons milk
  • 5 cups mixed salad greens
  • 1 small cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 1/4 cup walnuts
  • 2 tablespoons olive oil
  • 3 tablespoons olive oil for dressing
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Slice the goat cheese into thick rounds and chill for 15 minutes.
  3. Whisk the egg and milk together in a shallow bowl.
  4. Dip each goat cheese slice into the egg mixture and coat with breadcrumbs.
  5. Repeat the coating process for extra crispiness.
  6. Place the coated goat cheese rounds on a lined baking tray.
  7. Drizzle lightly with olive oil and bake for 10 to 12 minutes until golden.
  8. Combine the salad greens, cucumber, cherry tomatoes, red onion, and walnuts in a large bowl.
  9. Whisk together olive oil, balsamic vinegar, Dijon mustard, honey, salt, and black pepper.
  10. Toss the salad gently with the dressing.
  11. Top the salad with warm crispy goat cheese.
  12. Serve immediately.
