  • 4 oz goat cheese, crumbled
  • 1/2 cup walnuts
  • 1/4 cup dried cranberries
  • 1/4 small red onion, thinly sliced
  • 3 tablespoons olive oil
  • 1 1/2 tablespoons balsamic vinegar
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Toast the walnuts in a dry skillet over medium heat for 3 to 5 minutes until fragrant.
  2. Allow the walnuts to cool completely.
  3. Whisk olive oil, balsamic vinegar, honey, Dijon mustard, salt, and black pepper in a small bowl.
  4. Add spinach to a large serving bowl.
  5. Add red onion, dried cranberries, and toasted walnuts.
  6. Crumble goat cheese evenly over the salad.
  7. Drizzle dressing over the salad right before serving.
  8. Toss gently and serve immediately.

Notes
