Ingredients

2 lbs Beef Chuck Roast, cut into 1.5-inch chunks
1 lb Yukon gold potatoes, chopped
3 large carrots, peeled and sliced thick
2 cups beef broth (or low-sodium vegetable stock)
2 tbsp tomato paste
1 tbsp alcohol-free/halal Worcestershire sauce
4 cloves garlic, minced
1 medium onion, diced finely
2 tbsp cooking oil


Instructions

Select the Saute function on your Instant Pot and heat oil.
Sear the beef cubes in small batches until browned on all sides.
Remove the beef and add the onions to the pot, cooking until translucent.
Deglaze the bottom of the pot with a splash of beef broth to release the browned bits.
Return the beef to the pot along with the tomato paste and garlic.
Pour in the remaining beef broth and the Worcestershire sauce.
Secure the lid and set the valve to sealing.
Cook on High Pressure for 35 minutes, followed by a 10-minute natural pressure release.
Open the lid, add the potatoes and carrots, and secure again.
Cook for an additional 5-7 minutes on high pressure and perform a quick release to finish.

Notes

Ensure your Worcestershire sauce is specifically labeled alcohol-free or halal as some brands contain vinegar derived from barley or wine. If the stew is too thin, you can create a slurry with 1 tablespoon of cornstarch and 2 tablespoons of water to thicken the sauce after cooking.
