Ingredients

1.5 lbs boneless skinless chicken breast, cut into strips
1/2 cup oil-packed sun-dried tomatoes, drained and chopped
1 cup heavy cream
1/2 cup low-sodium chicken broth
3 cups fresh spinach, firmly packed
4 cloves garlic, minced
1 tbsp Italian seasoning
1/2 cup fresh grated parmesan cheese
1 tbsp olive oil
Salt and pepper to taste


Instructions

Season the chicken strips with salt, pepper, and Italian seasoning.
Set Instant Pot to Sauté mode, add olive oil, and sear chicken for 2 minutes per side until golden.
Remove chicken and set aside.
Pour chicken broth into the pot and scrape the bottom to deglaze.
Return chicken to the pot along with the sun-dried tomatoes and garlic.
Secure the lid and set to High Pressure for 8 minutes.
Perform a quick release once the timer ends.
Stir in heavy cream, spinach, and parmesan cheese.
Set to Sauté mode and simmer for 2-3 minutes until the sauce thickens and spinach is wilted.

Notes

If you prefer, you can use chopped kale instead of spinach for a more robust texture. Ensure the chicken broth is low-sodium to keep the dish from becoming overly salty when using parmesan. Store leftovers in an airtight container for up to 3 days.
