Ingredients
1.5 lbs ground beef (90% lean)
2 tbsp taco seasoning
6 cups crushed taco shells
1.5 cups melted provolone or Mexican blend cheese
3.5 cups mild/mexican crema-style salsa
1 cup shredded lettuce
1 cup diced tomatoes, fresh
0.5 cups diced fresh onions
3 tbsp plain Greek yogurt
Instructions
Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish
In a large skillet over medium heat, cook ground beef with 1 tbsp oil until browned and drained
Add 1 tbsp taco seasoning while beef cooks
Transfer beef to bowl. Stir remaining 1 tbsp taco seasoning with 1 cup warm water into beef mixture
In baking dish: layer 2 cups crushed taco shells first
Spread seasoned beef mixture over shells
Add 0.5 cup salsa, followed by evenly distributing shredded lettuce, diced tomatoes, and onions
Sprinkle 3 tbsp yogurt in dollops across the layers
Sprinkle remaining 3 cups salsa and 1.5 cups cheese over the top
Bake for 30 minutes until bubbly and golden
