- 2 bunches fresh parsley, finely chopped
- 1/4 cup bulgur wheat
- 2 ripe tomatoes, diced
- 3 tablespoons lemon juice
- 3 tablespoons olive oil
- 2 tablespoons fresh mint, chopped
- 2 green onions, sliced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Soak the bulgur in water for 15 minutes, then drain well.
- Finely chop the parsley and mint.
- Dice the tomatoes and slice the green onions.
- Combine all ingredients in a large bowl.
- Add lemon juice, olive oil, salt, and pepper.
- Toss gently until well mixed.
- Let the salad rest for 10 minutes before serving.
Notes
Use the freshest parsley possible for best results. Adjust lemon juice to taste. Store in the refrigerator and consume within 2 days. Add dressing just before serving for maximum freshness.
