- 400g spaghetti or linguine
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 large lemon (zest and juice)
- 1/2 teaspoon chili flakes
- 1/2 cup grated parmesan
- Salt and black pepper
- 2 tablespoons butter
- 1/4 cup pasta water
- Fresh parsley
Instructions
- Boil salted water and cook pasta until al dente.
- Heat olive oil in a pan and sauté garlic gently.
- Add chili flakes and lemon zest.
- Reserve pasta water and drain pasta.
- Add pasta to pan with butter and lemon juice.
- Pour in pasta water and toss until silky.
- Add parmesan, salt, and pepper.
- Finish with fresh parsley and serve warm.
Notes
Always use fresh lemon juice for the best flavor. Save pasta water to create a silky sauce. You can add spinach, shrimp, or grilled chicken if desired. Store leftovers in the fridge for up to 2 days and reheat gently with a splash of water or olive oil.
