- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 3 garlic cloves, minced
- 1 large lemon (zest and juice)
- 1 cup parmesan cheese, grated
- 1/2 cup pasta water
- Salt to taste
- Black pepper to taste
- Fresh parsley (optional)
Instructions
- Boil salted water and cook pasta until al dente.
- Heat olive oil and butter in a pan over medium heat.
- Add minced garlic and sauté until fragrant.
- Add lemon zest and lemon juice.
- Drain pasta and add it to the pan.
- Stir in grated parmesan cheese.
- Add reserved pasta water gradually to create a creamy sauce.
- Season with salt and black pepper.
- Serve warm with parsley and extra parmesan.
Notes
Always use fresh lemon juice for the best flavor. Reserve pasta water to make the sauce silky and smooth. You can add chicken or shrimp for extra protein. Store leftovers in the fridge for up to 2 days and reheat gently with a splash of water.
