Description

Lemon Pasta with Ricotta is a creamy, bright, and comforting Italian-inspired pasta dish made with fresh ricotta cheese, lemon zest, and Parmesan. It’s quick, easy, and perfect for a refreshing yet cozy meal any day of the week.


Ingredients

Scale
  • 400g spaghetti
  • 250g ricotta cheese
  • 2 lemons (zest and juice)
  • 3 tbsp olive oil
  • 2 garlic cloves, minced
  • 60g Parmesan cheese
  • Salt and black pepper
  • Fresh basil leaves
  • Chili flakes (optional)

Instructions

  1. Boil salted water and cook pasta until al dente.
  2. In a bowl, mix ricotta, lemon zest, lemon juice, olive oil, salt, and pepper until creamy.
  3. Sauté garlic in olive oil until fragrant.
  4. Reserve pasta water and drain pasta.
  5. Add pasta to the pan with garlic.
  6. Stir in ricotta mixture.
  7. Add pasta water gradually to create a silky sauce.
  8. Mix in Parmesan cheese.
  9. Garnish with basil and serve warm.

Notes

Always use fresh ricotta for the best texture. Save pasta water to help create a silky sauce. Add extra lemon zest for more brightness or chili flakes for a slight kick. Serve immediately for best flavor.
