Description

Indulge in the ultimate comfort food with these loaded mashed potatoes. This dish features fluffy, buttery Russet potatoes whipped to velvety perfection, then topped with savory sharp cheddar, crispy turkey bacon, and fresh, vibrant chives. Perfect for holiday feasts or a cozy weekend dinner, this recipe uses a potato ricer to ensure a smooth, restaurant-quality consistency. It is a decadent, hearty side that elevates basic potatoes into a sophisticated masterpiece while remaining free of pork and alcohol, making it a crowd-pleasing addition to any table.

Ingredients

Scale

3 lbs Russet potatoes, peeled and cut into 2-inch cubes
1/2 cup unsalted butter, softened
1/2 cup sour cream
1 cup sharp cheddar cheese, shredded
6 strips turkey bacon, cooked until crispy and crumbled
1/4 cup fresh chives, finely minced
1/2 cup whole milk, warmed
2 tbsp salt for boiling water

Instructions

Place cubed potatoes in a large pot and cover with 2 inches of cold water.
Add 2 tablespoons of salt to the water.
Bring to a boil, then reduce heat and simmer until fork-tender.
Drain thoroughly in a colander.
Return potatoes to the warm pot and shake over low heat for 1 minute to dry excess moisture.
Pass potatoes through a ricer into a large mixing bowl.
Fold in softened butter until fully melted.
Stir in warm milk and sour cream until desired consistency is reached.
Fold in half of the shredded cheddar.
Transfer to a serving dish and top with remaining cheddar, crispy turkey bacon, and fresh chives.

Notes

For the smoothest texture, ensure the potatoes are completely dry after boiling before ricing. Keep the milk warm to prevent cooling the potatoes too quickly during mixing. You can store leftovers in an airtight container for up to 3 days in the refrigerator.
