By cooking everything in one pot, the orzo absorbs the rich essence of garlic and sun-dried tomatoes, resulting in a comforting dinner that is both efficient and incredibly flavorful.
Ingredients
1 lb Chicken Breast, cut into bite-sized cubes
1.5 cups Orzo Pasta, dry
3 cups Low-sodium Chicken Broth
0.5 cup Heavy Cream
0.5 cup Sun-dried Tomatoes, chopped
0.75 cup Freshly grated Parmesan Cheese
3 cloves Garlic, minced
1 tsp Dried Oregano
1 tbsp Oil from sun-dried tomato jar
Salt and pepper to taste
Instructions
Heat a large skillet over medium-high heat with one tablespoon of oil from the sun-dried tomato jar.
Season chicken cubes with salt, pepper, and dried oregano.
Sear chicken until golden brown on all sides, then remove from the pan and set aside.
Add minced garlic to the same pan and sauté until fragrant, approximately one minute.
Pour in the chicken broth and scrape the bottom of the pan to release browned bits.
Stir in the dry orzo pasta and sun-dried tomatoes.
Return the chicken to the skillet once the liquid begins to bubble.
Reduce heat to low, cover the pan, and simmer until the orzo is tender and most liquid is absorbed.
Stir in the heavy cream and parmesan cheese until the sauce is creamy and well-combined.
Serve warm.
Notes
You can substitute heavy cream with half-and-half for a slightly lighter sauce. Ensure the pan is covered tightly during simmering to help the orzo cook evenly.
