Description

Indulge in a creamy, savory Italian-inspired entree that is sure to impress. This dish features succulent, golden-seared chicken breasts smothered in a luxurious, umami-rich sauce made from sun-dried tomatoes, freshly grated parmesan, and heavy cream. Perfectly tossed with al dente pasta, this restaurant-quality meal is surprisingly easy to prepare in a single pan, making it the ideal choice for both busy weeknights and special date nights.

Ingredients

Scale

2 large chicken breasts, sliced horizontally into cutlets
12 oz penne or fettuccine pasta
1 cup heavy cream
1/2 cup sun-dried tomatoes, chopped
1/2 cup freshly grated parmesan cheese
1/2 cup low-sodium chicken broth
4 cloves garlic, minced
1 tbsp Italian seasoning
2 tbsp olive oil
Salt and pepper to taste

Instructions

Boil a large pot of salted water and cook pasta according to package directions until al dente; drain and set aside.
Season the chicken cutlets with salt and Italian seasoning.
Heat olive oil in a large skillet over medium-high heat.
Sear the chicken until golden brown and cooked through, then remove and set aside.
In the same skillet, add the minced garlic and sauté until fragrant.
Stir in the sun-dried tomatoes, chicken broth, and heavy cream.
Simmer the sauce until slightly thickened, then stir in the parmesan cheese.
Return the chicken to the skillet to coat in the sauce and combine with the cooked pasta before serving.

Notes

Use full-fat cream for the creamiest texture. Ensure the chicken is thinly sliced for even cooking. Garnish with fresh basil or red pepper flakes for extra flair.
