- 4 large eggs
- 200 ml double cream
- 150 g cooked bacon, chopped
- 1 sheet shortcrust pastry
- 1 small onion, finely chopped
- 100 g grated cheddar cheese
- Salt and black pepper to taste
- Pinch of nutmeg
Instructions
- Preheat oven to 180°C (350°F).
- Roll out pastry and cut into circles.
- Press into mini muffin tin.
- Cook bacon until crispy and chop.
- Whisk eggs, cream, and seasoning.
- Add bacon, onion, and cheese to shells.
- Pour egg mixture into shells.
- Bake for 18–22 minutes until golden.
- Cool slightly and serve.
Notes
Use fresh eggs for best texture. Swap cheddar for gruyère if desired. Store in fridge up to 3 days or freeze for later. Reheat in oven for best results.
