- 6 large eggs
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1 tablespoon butter
Instructions
- Preheat oven to 180°C (350°F).
- Grease muffin tin.
- Sauté onion and bell pepper in butter.
- Whisk eggs and milk together.
- Add cheese, vegetables, and seasoning.
- Pour mixture into muffin cups.
- Bake for 18–22 minutes.
- Cool slightly before serving.
Notes
Do not overbake to keep the texture soft. You can add spinach, mushrooms, or herbs for variation. Store in the fridge for up to 3 days or freeze for longer storage.
