Description

These Mini Goat Cheese Quiche are creamy, buttery, and perfectly bite-sized. Made with flaky pastry, rich goat cheese, and a smooth egg custard, they are ideal for brunch, appetizers, or light meals. Simple ingredients come together to create an elegant and comforting dish.


Ingredients

  • 1 sheet shortcrust pastry
  • 3 large eggs
  • 120g goat cheese
  • 120ml heavy cream
  • 60ml milk
  • 1 small onion, finely chopped
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1 teaspoon fresh thyme (optional)

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Roll out pastry and cut circles to fit muffin tin.
  3. Press pastry into each cavity.
  4. Sauté onions in olive oil until soft.
  5. Whisk eggs, cream, and milk together.
  6. Season with salt, pepper, and thyme.
  7. Add goat cheese and onions into pastry shells.
  8. Pour egg mixture over filling.
  9. Bake for 20–25 minutes until golden.

Notes

Use room temperature goat cheese for best texture. You can add spinach, mushrooms, or herbs for variation. Store in fridge up to 3 days and reheat in oven for crispiness.
