Description
Indulge in this ultimate moist banana bread, a classic home-baked treat that is dense, flavorful, and incredibly easy to prepare. By using overripe, heavily spotted bananas and melted butter, this recipe achieves a tender, cake-like crumb that stays soft for days. Perfectly balanced with a hint of vanilla, this loaf is the ideal comfort snack for any time of day.
Ingredients
3–4 medium ripe bananas (with dark spots)
1/2 cup unsalted butter, melted and cooled
3/4 cup granulated sugar
2 large eggs, room temperature
1 tsp pure vanilla extract
1.5 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
Instructions
Preheat your oven to 350 degrees Fahrenheit.
Grease a 9×5 inch loaf pan with butter or non-stick spray.
Mash the ripe bananas in a large bowl until mostly smooth with a few small chunks remaining.
Whisk the melted butter and sugar into the mashed bananas until fully combined.
Beat in the eggs and vanilla extract until the mixture is uniform.
Stir in the flour, baking soda, and salt using a spatula until just incorporated.
Pour the thick batter into the prepared loaf pan and smooth the top.
Bake for 55 to 65 minutes or until a toothpick inserted into the center comes out clean.
Cool the loaf in the pan for ten minutes before transferring to a wire rack to cool completely.
Notes
Ensure bananas are very ripe with dark spots for the best flavor and moisture. Using melted butter instead of creamed butter is key to the texture. Do not overmix the batter once the flour is added to ensure the bread remains tender. If adding mix-ins like walnuts, fold them in at the end.
