Ingredients
16 oz fettuccine pasta
2 lbs boneless, skinless chicken breast, sliced into cutlets
2 cups heavy cream
1.5 cups freshly grated parmesan cheese
4 tbsp unsalted European style butter
4 cloves garlic, minced
Salt to taste
Black pepper to taste
1 tbsp fresh parsley, chopped for garnish
Instructions
Bring a large pot of salted water to a boil and cook fettuccine according to package directions until al dente; drain and set aside.
Season chicken breasts liberally with salt and black pepper on both sides.
Heat 2 tablespoons of butter in a large skillet over medium-high heat.
Sear chicken breasts for 5 minutes per side until golden brown and cooked through.
Remove chicken from skillet and let rest for 10 minutes before slicing.
In the same skillet, melt the remaining 2 tablespoons of butter.
Sauté minced garlic for 1 minute until fragrant.
Pour in heavy cream and bring to a gentle simmer over medium-low heat for 3-5 minutes until slightly reduced.
Reduce heat to low and whisk in the parmesan cheese until the sauce is smooth and emulsified.
Toss the cooked fettuccine into the sauce until well coated.
Top with sliced chicken and garnish with fresh parsley before serving.
Notes
Use freshly grated Parmesan rather than pre-shredded to ensure the sauce emulsifies properly without clumping. Let the chicken rest before slicing to ensure it remains juicy. If the sauce becomes too thick, stir in a splash of pasta water to loosen it.
