1.5 cups heavy cream
0.5 cup oil-packed sundried tomatoes, drained and chopped
3 cups fresh spinach, stems removed
4 cloves garlic, minced
0.5 cup low sodium chicken broth
0.5 cup freshly grated parmesan cheese
1 tablespoon Italian seasoning
2 tablespoons olive oil
Salt and pepper to taste


Instructions

Season the chicken cutlets generously with salt, pepper, and Italian seasoning on both sides.
Heat olive oil in a large skillet over medium-high heat.
Brown the chicken for five minutes per side until golden and cooked through.
Remove chicken from the pan and set aside.
