Ingredients
2 large chicken breasts, halved
1/2 cup sun-dried tomatoes (oil-packed)
3 cups fresh spinach
1 cup heavy cream (or half-and-half)
4 cloves garlic, minced
1/2 cup parmesan cheese, freshly grated
1/2 cup chicken broth
Salt and pepper to taste
2 tablespoons olive oil
Instructions
Season chicken breasts generously with salt and pepper.
Heat olive oil in a large skillet over medium-high heat.
Sear chicken for 5 to 7 minutes per side until golden brown and cooked through; remove and set aside.
In the same skillet, add minced garlic and sauté until fragrant.
Pour in the chicken broth to deglaze the pan, scraping up any browned bits.
Stir in the heavy cream and sun-dried tomatoes, letting the sauce simmer and thicken slightly.
Add the grated parmesan cheese and stir until melted and smooth.
Fold in the fresh spinach and cook until just wilted.
Return the chicken to the skillet to coat in the sauce before serving.
Notes
Use thin-cut breasts or pound them to an even thickness for uniform cooking. Always grate your parmesan from a block for the smoothest melting consistency. You can substitute spinach with kale if preferred.
