Description

Indulge in a restaurant-quality meal with this One Pan Tuscan Chicken. Featuring tender chicken breasts seared to perfection and simmered in a rich, creamy garlic sauce with sun-dried tomatoes and fresh spinach, this dish is the ultimate weeknight solution. It delivers complex, savory flavors in a single skillet, making cleanup effortless while ensuring a nutritious and comforting dinner for the whole family.

Ingredients

Scale

1.5 lbs boneless skinless chicken breasts, sliced into cutlets
1 cup heavy cream
0.5 cup sun-dried tomatoes, oil-packed, drained and chopped
3 cups fresh spinach
4 cloves garlic, minced
0.5 cup low-sodium chicken broth
2 tbsp extra virgin olive oil
Salt and black pepper to taste

Instructions

Season the chicken breasts generously with salt and pepper on both sides.
Heat olive oil in a large skillet over medium-high heat until shimmering.
Sear the chicken breasts until golden brown and cooked through, about 5-6 minutes per side, then remove and set aside.
Add the minced garlic to the same skillet and sauté until fragrant.
Pour in the chicken broth and scrape up any browned bits from the pan.
Stir in the heavy cream and sun-dried tomatoes, bringing the mixture to a gentle simmer until slightly thickened.
Add the fresh spinach to the sauce and cook until just wilted.
Return the chicken to the skillet to coat with the sauce and heat through before serving.

Notes

Ensure the chicken is sliced into even-sized cutlets for uniform cooking. You can serve this dish over pasta, mashed potatoes, or with crusty bread to soak up the delicious creamy sauce. Store leftovers in an airtight container in the refrigerator for up to 3 days.
