Ingredients
15 oz can chickpeas, drained and rinsed
1/2 cup premium hulled tahini
1/4 cup freshly squeezed lemon juice
1 clove garlic, minced to a paste
2 tbsp extra virgin olive oil
1/2 tsp sea salt
1/4 tsp ground cumin (optional)
2–3 tbsp ice water
Instructions
Combine the tahini and lemon juice in a food processor and blend on high for one minute until thick and whipped.
Add the minced garlic, salt, olive oil, and cumin to the tahini mixture and process for an additional thirty seconds.
Add half of the chickpeas to the food processor and blend until particles are small.
Add the remaining chickpeas and blend for two full minutes until the mixture is ultra-smooth.
While the processor is running, slowly drizzle in the ice water to achieve a light and fluffy consistency.
Notes
For the smoothest texture, peel the skins off the chickpeas after rinsing. Serve with a drizzle of extra virgin olive oil and a sprinkle of paprika or fresh parsley.
